it's correct to keep "ukemi" untranslated, because that's what you call it in martial arts when you fall safely to the ground, sometimes with a roll. In fighting games, this is often what the Japanese version calls it when you "tech the landing", to cancel your hit-the-ground animation and instantly roll instead.
