You have a far too stiff image of nobles. Also, aristocracy doesn't need to be only nobles but wealthy merchants as well, among other people, such as high officials and top clergy. The demands for men and women among nobility were different as well. But I wouldnt say nobles were onky ones with free time, maybe in early days but as merchants gained foothold, plenty of them had free time and some of them may pursue making new recipes as a hobby
