Well, atleast for Season 1, they would probably end it with Kaeha's death and Aesir continuing on his long journey.
Which would put it around,

• Chapter 22 or 23 of the Manga
• beginning of Light Novel Volume 3

I mean, that's a major point of Aesir's life since he started his journey, as everyone one of his first old friends are dead by that point, and even Wynn leaves for his journey, and Aesir starts traveling alone again.

I went to revisit chapter 22 as a refresher on kaeha's kids and grandkids, boy they've grown so well. That must make kaeha and her mum so happy in the afterlife of that world.🥺🥹
