I like detective series and 90s and early 00s fantasy shounen and shoujo. You-can-solve-it mysteries are my favorite. Interesting worlds where the author put in a lot of effort into developing the background like Witch Hat Atelier and Dungeon Meshi are the best. It is bothersome that the fantasy genre is being flooded by MMO, stats, and game-based Isekai. I read more western novels than manga, so anything that deviates from the typical Japanese/Korean/Chinese flavor or else goes for a full throttle cultural experience (like Prof. Munakata) interests me. Please recommend me series that have a strong plot and creative characters but don't appeal to fetishes or questionable preferences.

Here are some quick completed manga recommendations:
Oneshot: HAMPTON SISTETS, Chocolate Underground, Rengoku no Ashe, Gokiburi Buster
Shounen: Ozanari Dungeon, Kekkaishi, Psyren, MÄR, GetBackers
Shoujo: Meteor Methuselah, Shinigami Hime no Saikon, Shibariya Komachi, Tokyo Crazy Paradise, Fushigi no Maria-kun
Mystery: Tantei Gakuen Q, Q.E.D., The Case Records of Professor Munakata, Kindaichi, (Detective Conan, if it ever finishes),
Horror: H.P. Lovecraft's The Colour Out of Space, Wakusei Closet
Scifi: Pluto, Dimension W, Planet Garaga
