"...the powers we were given as Demons..." tells me they were probably transformed by the Witch rather than being born as Demons.

If you look, her hand was jerked away when the griffon grabbed the kid. I'm assuming it grabbed him the same time she did.

While I am a bit disappointed we don't get to see the Kousuke's own fighting style, I understand why. This series isn't about the MC being some ultra powerful fighter. Instead, it's more about establishing a mythology with Kousuke at the center.

The girl and the dog was almost certainly the one armed girl and guard dog carrying the witch's head. His first attempt to flee was probably the realization that the witch wasn't dead, which means there's a witness who could inform the Demon Lord of his attempt to kill one of their own...
