No it kinda isn't. He was always like this. Reread that again, he didn't stay quite monk boi just yaps. And that is totally in character for him.
#1 he is loyal to Oda
#2 he doesn't like scheming
#3 introducing somebody is very dangerous, because it is under your name.
I love the cooking here. I actually prefer this than the isekai one (that one is 9/10 tho btw). You can just see how much cooking can be put in such a setting
