Even if we somehow had a fanwork, they'd have to go through all these ways of basically locking Itsuki out (basically making him okay with leaving Hinako after the mishap) just to justify a Mirei route.

We know how the story should end but dang I haven't really read series where the side characters outshine the main female lead in awhile, Guess I either read too many good stories or they just happened to know how to handle stuff. (Not to say Hinako doesn't have things for her but it's more shoe horned in)

I haven't really read series where the side characters outshine the main female lead in awhile,

I find that's reasonably common, though it used to be way more common back when harems started their popularity. Main girl was usually very safe and plain, while the other girls had actually interesting quirks. Nowadays more FMCs are more fleshed out with less plain stuff.
