Yeah, what you're saying is totally accurate. I have Japanese knives and and a western Chef's knife, and the blades are completely different; my santoku has a sheepsfoot point and my gyuto has a spear point, whereas the western Chef's knife features a drop point, and in both cases, the edge of my santoku and gyuto are both much flatter and straighter than my western Chef's knife.
