It's not really explained (or maybe I forgot) but I guess different types of undeads have different vulnerabilities?
Like a vampire is stronger but gets more vulnerable as "balancing"

That could be an explanation, but then there's chapter 34, where Nive said how vampires hunt tarrasques to prevent their poison from being processed into something that can harm them, meaning they should be immune to the basic version just like Rentt was, making Isaac the weird one right now.

they litterally use tarasque poison against other vampires cause it works. That is the poison in t he air, so yeah... I'd guess he'd be weak to it

tbf, it has been a while since, but
one of the first abilities we learned about rentt's transformation is his immunity to poison
back when he was a ghoul/zombie, loraine did tests on his new body and found this out
i'm about 70% sure rentt even mentions it while fighting the tarrasque
