Not sure about pepper rice, on manga it is just a fried rice but going roundabout in the cooking process.
Also, yes, you can use MAYO in place of OIL, although I personally advise to go with butter instead. Using corned too can be tricky due to its crumbling texture, go with luncheon/spam and save yourself from the trouble especially if you are not used to deal with processing meat.. (and NOT your MEAT down there)
