Gyros predate Turkish invasion. Greek soldiers, as far back as Alexander, would cook meats on spics and shave them to be placed into feta. The modern variation came from Greek refugees from the evacuation of Anatolia, yes, but the original concept is VERY old.
Same with souvlaki (largely the same story, though used in cases where the meat was cut rather than shaved)
Tsiporou and other drinks are inherently Greek, as their origins are in the natural fruits of the region.
The "placenta cake" is the ancestor of both the modern cheese pie and the modern baklava. The addition of nuts to baklava was during the final years of the Byzantine Empire.
Pita and Tzatziki, again, are core to Greek agricultural tradition and made with local produce.
Same goes for Greek salad, wines, same goes for seafood except of course for the fishing rather than agricultural tradition.
