I’m not a huge TYPE-MOON fan, but I enjoyed Tsukihime and thought some of Fate/stay night was good. The action sequences felt drawn out in both Mahoyo and FSN. Mahoyo gets a 7/10. Maybe worth finishing if you like the characters. For comparison, OG Tsukihime is an 8 and FSN is an 8.5, mainly for nostalgia
