Barbarossa literally means red beard, yet from the shading it looks very much black.
To compare, going by the cover art both Gustav's hair and the plume on Julius' helmet are red, yet they were shaded in a very light grey.

It obviously was, however as it turns out, I'm part idiot here. While the name indeed referred to the beard in the case of the Emperor Friedrich I., in the case of the Osman pirate it apparently was a parody on his (nick-)name Baba Aruj.
