Do the classes not get stronger by leveling? Couldn't she simply have done that much damage (maybe if we account for the guy having lost health from the cursed weapon)?

Possibly, though Wizardry (well the ones this series pulls from) doesn't really work like that.

Certain classes (Fighter, Lord, Ninja, and Samurai) gain an extra attack every 5 levels, but their actual damage per attack is still going to be rather low (a really good longsword does 2-12 damage, with up to 3 extra damage based on the character's strength).

Meanwhile Critical Hits 1) instantly kill the opponent and 2) are usually depicted as being decapitations.

I'm not sure what Aine's deal is since updates dried up and I haven't read the LNs, but I think the fact that she one-shot the guy was definitely meant to pique the interest of readers familiar with the series since a Cleric should not be able to wield a sword, much less land a decapitation.
