Choose for love. Alternately, the 'standard' pick is Waver because he's a pretty good buffer and NP levels don't matter for him, but if you already have him then it gets a bit more complex.

My understanding is that no, he is not. You can know how to use Magecraft without being considered a Mage, kinda like knowing how to throw together a pot of spaghetti doesn't make you a professional chef. His adopted dad also took pains to prevent him from being part of that world to begin with, for all the good it did him.

Kiritsugu is the reason why Shirou uses his damn blood veins and nerves to channel magic with instead of his magic circuits; he taught him wrong, on purpose. Shirou actually has pretty decent quality magic circuits, and if the Mage Tower had known he had a Reality Marble (what Emiya/Red Archer uses to cast Unlimited Blade Works) they would have vivisected him alive to try and figure out how a damn non-mage child has one, because Reality Marbles are one of the secrets of the world they still don't understand and desperately want to monopolize.

I understand the line of thought with obsessive researchers of all kinds wanting to cut out every waste of time away from more research but the first alchemists used kitchen tools and the bain-marie is named for the alchemist that created it who is the very earliest alchemist we know of.
There's no blatant historic overlap between alchemy and cooking like there is with alchemy and alcohol but it's there.
