But as usual I'm always confused why Japanese writers have such a weak grasp or look down on Medieval setting culinary development. Yeasted breads were already being made in 1200 BCE Egypt and 500 BCE China, though usually through fermented dough in the form of sourdough especially in Eastern Europe where sourdough is even used for soups and drinks - there were even separate guilds for white and brown bread bakers in 1300's England.

Sourdough is Yeasted dough - in fact large boiled then baked pretzels were a staple in Europe especially during holidays and would have bene made using sourdough starter or beer making yeast which they also had on hand because - duh - beer needs yeast.
Yes but sourdough and bread made with commercial yeast have different textures and flavor profiles. I.E sourdough has a slightly sour taste while commercial bread is sweeter and lighter in texture.
