Would it really be the same person? If you put the memories of the original into another body, even though it is only a copy.
Would you still act the same around it?

Basically it comes down to whether you, or whomever is the observer, feels is right. The flipside is "if it walks like a duck, acts like a duck, and quacks like a duck; it's a duck" being basically "close enough, why care about the details?" And you kinda just have to decide whether it matters or not ...

Every moment of every day your cells continuously die and get replaced. We've always been a living ship of theseus with the only difference being that our parts (cells) split instead of being replaced by outside material. Though even that could be debated since any food intake is also partially repurposed as building material for new cells.
In a more philosophical vein, the only sense you can truly trust and where your sense of self is truly manifested is your mind; your thoughts, so why does it matter if a mechanical brain processes the thoughts instead of a meat brain?

he says that senses decieve us citing that he can experience the same things he does in reality as he can in dreams and as such he forgo trusting reality as presented to be real at all. That while others would refuse to accept that they might be wrong he was open to the idea of instead being wrong and willing to learn instead, and as such realised that while this was an interesting thought it was itself a trap since if everything is an illusion then he himself is an illusion. So he realised the only thing he could not doubt was the fact that he himself exists as he is capable of questioning whether he exists and as such his famous phrase "je pense, donc je suis" (I am thinking, so I am) must be a fundamental truth of which he was searching for which in philosophy is referred to as a "first principle" (basically something that is the origin of all things that come after it while itself not being able to be found as an off sprout of another). Or in other words he realised that while everything can decieve everyone, there is only one thing that can not decieve the observer: oneself. and as such if you can question your own existence you must therefore exist.
