I'm not fond of carrots too much either (unless they're sliced rly thinly in this beef/broccoli dish from my usual chinese takeout place) tho i imagine it prolly doesn't taste the best raw versus prepped and seasoned in some way

Carrots aren't really good as a main flavor outside of carrot cake. They're much better as a background flavoring. I couldn't imagine Pot Roast without carrots and onions. Even if you can't pick out their individual flavors, you can tell when they're missing because they provide much needed depth to the flavor of the sauce. I also use carrots in Japanese-style Curry and they're wonderful for diversifying the texture.
