I'm pretty sure given the fact the dishes are named as they are that they're concentrated negative emotions. A big thing in Ghost stuff especially JP paranormal beliefs is that evil spirits both sustain themselves and grow more powerful by feeding off the negative emotions from humans. So it really is just like food for us as it sustains them.

And obviously our one-eyed princess needs to consume Maruyama's seed
