It really didn't look like either of them cooked enough for both the special and general judges. Also, they really honestly both should've been instantly disqualified for neither of them making a CHINESE seasoning. They both ended up using middle eastern ingredients, which is technically Asian, but only in the sense of Asia Minor/the Near Orient, and is really Western.
I doubt a week would've been long enough for the cheese to ferment the nuts, which would be something hard for the bacteria to ferment in the first place.
