About the uncle... I don't think he was ever "evil" evil. It was shown he loves Eugene dearly but hates everyone else in the family, with all those torn pictures. So out of revenge he uses the Abyss to get strong. Probably hunts these creatures to use their blood and make himself strong enough to take revenge, but also doesn't want his nephew to be hurt.
