Well as far I'm getting this... every student there was only thought lessons how to be a cook..

They haven't thought about business ethics/management, secretarial course (I forgot the name) and anything related to customer service yet.

And they were tackling about running a restaurant right on the spot without this knowledge.

There were a couple Gen Ed students who were learning how to be servers, they're the ones who probably should have been dealing with payments.

This method unfortunately wouldn't help the kids get experience in a cafe setting, the servers in particular.
