Bell peppers are actually great. I unfortunately don't like any beans, green peas, eggplants, coconuts, to name few. I would also go great length to avoid ketchup, mustard, and mayo on any of the food that I like.

Have you tried Baba ghanoush? it is a eggplant recipe that is quite tasty, and you can eat it with pita bread or mexican tortillas
Hummus is also quite good, and is made with chickpeas
I don't have anything for green peas and coconuts, other than rice really, and frankly what they add is mostly texture, which can be important too, of course coconut rice is more for dessert based rice
I myself hated lentils most of my life, until i found that you can use them to make lentil bread out of all things, so sometimes you really just have to find the right way to prepare something in order to come around it
