Can someone explain the "grip" and sushi thing to me? Is it a reference to something in Japanese pop culture I'm too gaijin to understand?

Can someone explain the "grip" and sushi thing to me? Is it a reference to something in Japanese pop culture I'm too gaijin to understand?
I believe it has to do with the skill Sushi chefs have to master to create the perfect ball of rice for each portion. And one that Tohru seems to misunderstand as a combat stance/magic spell... before serving store bought sushi (that doesn't require such a mystic hand gesture, because the portion was already made).

Rather than pop culture, the basic classical sushi is nigiri sushi, and this nigiri is the same as in onigiri. It comes from nigiru, which is basically "to grip," and the process of making it is the same verb, so that is just the usual terminology for making sushi.
