Ok so Yaerg cooking that meal is insanely funny to me for some reason. Four meat dishes, a cream soup and rice. Not only is it terribly unbalanced, most of those dishes are things you need to start the day before. Coq au vin needs to be started at least the night before so the chicken and pearl onions can marinate/brine. Terrine's preparation time varies depending on the ingredients used and whether the meat is ground from scratch, but the stock for the aspic at least needs time to cook and should ideally be made the day before.
Farci is just a generic word for stuffings of any kind really. But the dish shown in the chapter is very clearly tomates farcies, which is the french version of stuffed tomatoes and uses minced meat (not ground,) breadcrumbs and cheese, so yeah a meat dish.
