1. Blue Lock - football manga completely focused on individual development and ability as a striker, and having Ego to match the worldclass strikers in ability.
2. Be Blues - Football manga about a football prodigy who went through a career ending injury and builds his way up from the bottom to one day retain his former genius.
3. Diamond no Ace - Baseball manga about an unpolished gem who enters the world of highschool baseball after being scouted from the boonies, has a peculiar pitching motion and is faced with the difficulties of trying to out perform his rival another first year pitcher who boasts some of the fastest pitches in highschool baseball. Lots of development in this one in particular, there's even an Act 2.
4. Baby steps- tennis manga about a guy who picks up tennis with very little experience but slowly gets engrossed by the sport and uses his skill of notemaking and analysis to accelerate his improvement.
5. Haikyuu - short kid dreams of playing highschool volleyball, has extraordinary jumping ability but lacks in all other aspects, accompanied by a skillfull yet unsociable setter, the two must work together to improve eachother's plays and grow as a team.
6. Slam Dunk - Delinquent with high physical specs joins the powerhouse basketball team despite of his lack of any previous basketball experience. The team is built up from the ground up with a bunch of players each with their own individual tendencies. The delinquent rookie has to prove his worth and improve in ability in time for the inter high
Most of these are pretty famous though, so I won't be surprised if you've read all of them
