It's not unique to Japan or China, but making recipes based on wordplay just seems like a terrible idea pretentious people came up with to add gravitas. That and magical thinking that should be regarded as irrational in any era like numerology. I like that Ken uses this as a pretext to gauge people, and there's more to his actions then just trying to wow them.

It's a centuries-old Japanese folklore trope for there to be episodes of important people talking in wordplay and puns, and being able to figure out the "hidden meaning" behind them is indicative of a person's intelligence/wisdom/sophistication. The author having Ken do that is probably just them running with that trope.
