In-universe, it’s a good way to give Rent another set of abilities through a helper. It also helps some encounters more dynamic. It means that he’s never truly alone despite being “solo”.
On a meta level, it’s definitely an easy way to add comedy and levity to the story. Rent is a very practical and logical person, while also being fairly sensitive to different situation. It’s hard to add comedy with this kind of character. If he has a rat companion though, it can help create a pacing of comedy and lightheartedness between major action and emotional beats.

The annoyance isn't that it's a fire breathing rat, it's when it robs agency from the MC or it is used to bring levity to what should have severity, i.e. main boss defeats, an MC going super saiyan, or whatever.
The use of the rat as a way to expedite the story through grindy mobs is just outside acceptability. An improvement from the cringe of the tarasque episode.
