So it was explained back in the early chapter but he has two kinds of level, the current one and the overall.
The current one will reset every time he dies, meanwhile the overall is the level he is really in and people doesn't seem like they could see, it does not reset, it only goes up the more he levels up.

By the way, it seems like his required exp to go onto the next level goes up with the overall and not with the current one.
