I think it's a supernatural injury. Apparently, at least in Minji's case, her "soul" is segmented by body parts, and the monster did say it wanted just a bite, if I recall correctly, to preserve the rest for others. So the arm is currently inanimate, even though it's technically alive. Kind of like what her little cousin must look like to doctors.

Oh hey I did raise the possibility of the being able to see being a hereditary trait in an earlier chapter.
