I can't tell if the princess is scheming something, just likes messing with people, or is simply sheltered. She seems to contradict her previous sentence with the next, speaks in a very vague way, and constantly laughs at jokes that only she is privy to the punchline of. It honestly makes her look like an autist more than anything else lol

That doesn't really sound like sheltered behavior to me. It seems like a weird mix of scheming and messing with them but not particularly well with either. At most, she's obscuring her exact intentions but the fact that she's up to something is way too obvious. Unless her plan requires that they think she's sus and engage with her out of curiosity, it isn't helpful. Her messing around is also kinda low impact. The stuff she keeps jumping around with are easy to dismiss and move on from. It's like she's trying to provoke him but someone who's got their own stuff going on probably wouldn't bother biting.

After thinking about it some more, it seems like a mix of enjoying spending time with other people close to her in age, trying to provoke some kind of response/outburst from either the MC or Amiyu (which was successful, if so), and giggling at the thought of them being oblivious to whatever ulterior motives she has. We'll just have to see if she's playing some 4D chess like Seika or not.
