to be fair she would not be able to escape and did not sense her before seeing her, and I think it would be a safe bet that the ma'am did sense the MC way before so she did not really have a chance/choice in the matter

I love how she's so clever here. She already realized how dangerous the situation is as soon as she saw the lady. She cannot escape, nor can she attack, because the lady is too strong for that. So instead of panicking by trying to flee or fight, she tried the respectful approach and hopes the immortal would deem her small enough to care. Unfortunately, she's not cunning enough to hide her honest reactions, easily revealing her identity (when she doesn't know the other person) & still getting into trouble.

Btw, she's not trusting the old lady. She's being wary to not step on her toes and die for it
