Its been a long time i seen this manga. Either way, wasnt expecting my country dish would be here! So i just want to reviewed a bit about this recipe.
Pretty accurate ingredients, although i wouldn't use cooking wine and what is nanpura? i've never heard that before? And yes, thats kecap manis, which might be strange for outdonesian people where the pronounciation closer to ketchup but its actually soy sauce. Sometimes people also use regular soy sauce and sesame oil.
What about the proteins? You can use anything honestly (chicken, fish, prawn, beef, lamb, goat, pork, etc) but make sure that you cook it correctly (like do you cook it first or put it after the noodle).
The only thing missing here is probably "acar", some people/place used it but others not. "Acar" is actually indonesian pickle. Cucumber (sometimes with bird eye chili) dressed by vinegar, sugar and salt.
