We all know this is drama bait. Mom's going to give some reasonable explanation. She knows how hard Seto works and his overall good influence on Anjou. He's surprisingly laid back but steps up with his iron spine when it's truly needed. Most likely mom is worried that Anjou will roll over him selfishly without thinking like when he wanted to study. It took her finding out his backstory to learn to be less selfish. And mom probably wants Seto to grow to be more confident in saying no to Anjou and holding her to his decision.

There are definitely situations I would consider “simping” even if they’re you’re partner. For instance if they’re sleeping with other people and you know but don’t leave them. Or if they’re taking advantage of you in some way.

Lucky for MC, Anjou is incredibly sincere with her relationship and they’re mutually supportive of eachother, therefor simping does not apply, that’s just love.
