Doesn't the color of steel vary with the carbon content, not the heat treating? I think the author got stuff mixed up.

Damascus blades have alternating layers of color, despite going through the final heat treating all together.
Conversely they can use lasers or induction to heat the edge of tools like wire cutters to achieve differential hardening without any visible changes.

Dumb as breadfruit? I recall a series where the MC was forced to marry a "villainess" and she was isekai girl, so she was annoyed about how all bread was basically a baked fruit. So there was no other types, no pancakes no brown bread.

Most likely, her research topic is already known in principle, but she is the first person to study it scientifically. And to publish the results, instead of making it a closely guarded secret.
Also, those sample color sheets are good stuff - it's not easy to get the color just right with old-time technology.
