How did this series go from a cute semi slice-of-life to some weird shit about assassins and superpowers?
The assassin shit was there from the start and the broader narrative principle behind Chekhov's gun means they have to justify its inclusion until such time as they can tie up the loose ends even without the bones of the premise kind of putting a hard lockout on exclusively SOL material; the ball has to keep rolling.

Yuki's a former assassin with a troubled past with a criminal underworld that still exists, and continuing to parcel out that troubled past in ways that matter to the story brought in more characters who knew her when she was an assassin, as well as people who know those people, one of whom is her forgotten younger sister whose backer in attempting to track her down is a singer with mind control powers.

Frankly the ninja schoolmate cursed to turn into a bunny when she uses her ninja powers is the bigger head-tilt for me in this mess, but admittedly it's been a good long while since I remember Hikage first becoming relevant to either side of the plot continuum here.

I swear I've read this one before, someone please tell me I'm not the only one
Yes, there was a Galaxy Degen Scan version before.
But for some reason it was removed from Mangadex.

Now this is the translating schedule that I much prefer, plus the quality is still pretty decent. Keep up the good work👍
Because there is competition.
Now GDS is competing with My Darling for this manga.

Thanks to My Darling, GDS which is usually slow to release chapters, suddenly rose from the grave and released chapters 63 and 64 within a few hours. Chapter 63 GDS version was uploaded here, but for some reason it disappeared.

Her backstory itself was never really my issue. It's pretty much expected that at some point tragic hero/heroine backstory will become a main plot point for whatever progression is going on. My beef is why do we need Superman strength, mind control powers, transforming ninja rabbits, and all sorts of nonsensical mysticism when the series premise neither set it up in the initial world-building nor fits with the actual story outside of DxMing or Macguffining various conflicts or story elements?

Basically I agree with a lot of what you're saying, but it's still just irritating as a reader to have things shoehorned into the story because the author either likes that sort of thing, or has no creativity in writing.

Don't forget Hitoyoshi's family that are connected to this "assassin's underworld" as how his dad was friends with Yuki's previous master and his mother might as well be a real vampire as seen in chapter 34 right after the part where the anime ended.
Honestly, I don't get why his sister doesn't live with him if they're pretty much absent parents.

I agree that we didn't need Yuki beating Anna's mecha using a Buster Sword but I was kind of ready for some weird stuff since Grace appeared and had Yuki deflecting rifle bullets with her knives.
