Fight or flight response would lead most bjj practitioners to just rip that rear naked choke and choke him unconscious before he could stab again. If you let go of the rear naked choke you'd be in a much worse position.
At that point when it's locked in and you have a body triangle you can just arch your back as hard as you can, pull your shoulders back and it's a done deal. Then just keep the choke on for an extra 10 or 15 seconds before you start crippling him to make sure he can't reach for any other knives when he wakes up.

In Japan? Good luck. About the closest I've seen, beside the "JSDF isekai'd to another world" is AirSoft fanbois isekai'd to a fantasy world where all their make believe guns work like real ones. No, this one will stay true to the trope that guns are more evil than any plot involving AOW.
