I honestly don't know how it will go. On the one hand it's a bloodbath where anything goes, so we could see Yuri or even some currently unnamed student sneak into the top three. On the other hand, it's possible that the current guards hold their position due to already being capable and being extra motivated to hold their ranks.

I actually think it's more likely that Sou's guards will change ranks between eachother, which would change where they sit in the classroom. Whoever ends up 3rd in the class basically hits the jackpot there.

Boys and girls wear school uniforms during your formative years when you're most susceptible to having your tastes influenced. Every girl your age at your school is wearing a school uniform, if you have a crush you're used to seeing her in a school uniform, eventually you get a taste for a school uniform. It's the same thing with braces, most people that have a thing for braces probably had a crush on at least one person with braces at school.

It doesn't make much sense for someone that didn't go to school with a uniform to have a thing for uniforms so when that happens it's pretty sus.

I have a feeling the grade ranks, which seem to be fairly balanced between classes, will probably shift in favor of class E, which could draw attention from the guard students of other classes. (particularly classes B and C, which don't know of Sou yet)

So when the guards were introduced both grade and class ranks were listed. So top 3 per class are the 3 official guards for that classes male student if there is one. Iirc Hinata is 3rd in class, 14th in grade meaning now she might be vulnerable to being passed if the re-ranking happens after a test this week for example.
The class may have been low motivation, particularly Yuri who until now did not want to have to be near the male student. They are all a bit more motivated to up their ranks, priorly the male was not present or before that a normal boy for the setting.

Weeeeell, you're right. But they are kinda dumb in a different way. In class the place next to Sou might be the best, since you can talk during lessons while the other two would sit in front. They'd have to show him their backsides with few chances to interact with him. But here?

This is not school, this is a coffee shop. If I was Kana I would quickly seat myself right in front of Sou. Essentially make it the same seating as in class, but here the best position is right across. That is, if you want to gaze at him, have him look at you or if you want to try feeding him some delicious cake - that's something I would definitely demand as my right if I was Kana...

Don't worry, Kanaria has powered up - she's bolder now. Do you think she would have taken Miku on like this all by herself before? Never... Kanaria isn't stupid, she knows that she is physically outclassed in terms of weight and size, forget Breasting, no way to win that, lol... Kana's powers lie elsewhere. Also, she said before she'd join forces with Hinata against Miku if it would come to the extreme, but here she went at it on her own.

If I had to guess, it's not by choice. Maybe the property has belonged to the same family for a longer time. There might have been some other kind of shop there first, maybe one where customers didn't need to access the second floor. I remember one cafe in a building from the 18th century. It didn't have two floors, but it had a whole bunch of small rooms. Not really ideal for convenience, but it was pretty.
