That being said, so far as I can tell Jan is just making Laoganma, I really hope the big reveal isn't just "oh my god he spiced the oil!" because that's literally just how you make Chinese chili oil/crisp, and would massively reveal the author's Japanese background.

Yeah seems the translation is a bit mixed there: We Vietnamese call it nước mắm

mắm tôm means "shrimp paste" - "Tôm" means "shrimp", while "mắm" refers to seafoods fermented with salt.
