I thought it was the author being poetic and foreshadowing how the taste of revenge doesn’t actually taste that great but using the dragon’s flesh as a metaphor. Like, he thought he’ll be happier after getting his revenge.

There are some authors that speculate that rapidly regenerated flesh looses some of it's magical qualities. So freshly regenerated parts would loose some of it's flavor in addition to strength and durability. No clue if that is what's happening here, but that would be my assumption.

I think I read a similar idea a long time ago, for using some regenerative creature as sustenance a long time ago. Kinda interesting theory, maybe if he eats another part of the creature (that didn't got exploded during the battle) we could test the theory, maybe when they leave the dwarf village and they take some meat for future food we could get a comment if the meat still tasted bland/dull.

we could also get that his level up affected his senses even his taste sensitivity and it could tie with screenwatch theory, like him getting punished for his atrocities as he can't enjoy past stuff like food or sleep in the future.
