Probably the latter. The pick is too small to be used as a proper weapon.
After stabbing him, he probably broke it down and made a pick out of it because while he wanted to get rid of the evidence, the material of the dagger was just too valuable to completely dispose off.

And like Leon said, he wanted to keep a trophy of sorts for what he had done.
