They aren't really effective antiparasitic agents though. Anisakis (a parasitic worm in fish that can survive for a bit in the human intestines) can survive those.
And it doesn't really penetrate meat well enough to harm the parasites unless you apply a proper technique.

Now that I think about... why doesn't the protagonist ever decide to gang up on the villains when they are having an "important" breakthrough that can't be interrupted.
Its a shame they didn't show how everyone was afraid of the potatoes and then eventually she convinces them it is safe to eat like in the novel.
Though I do disagree with previous comments on why they haven't discovered some cooking methods. Technology like cooking methods don't automatically...
