Devil / Demonic possession seems like a very real possibility in this world, you have magic and actual gods after all, hell the goddess resurrected Jelly after she got stabbed in the heart earlier in that old chapel (church?).
Since she was left mostly alone it doesn't seem impossible that after she was made a saint someone came by to put a demon in her, we've ben shown that a it wasn't just the servants that wanted her dead there's an entire organisation after the saints as a whole and they have a grudge to settle with the goddess.

That's the opposite of the truth -- nobles should care greatly for their reputation and name. Imagine that amongst the nobles' circles, it is widely known that your daughter is a bloody psycho bitch? That's an embarrassment.
All that's left, is how valuable "being a saint" is to the higher-courts, if her behavior is something that can be overlooked.
Personally, I'd imagine that the father would take his daughters' heel-turn to be a personal insult to his family name and honor, and would do something about it. Now "that's nobility for you"...

really sucks to see an innocent child turn into a psychopath, you cant even say she's better now since she isint really her anymore. at least evil jelly is dead and thats good for everyone else.

Yeah, somethings up with OG jelly. Villanesses becoming cruel due to too much parental indulgence is a common trope, but the snap difference in the way she acted pre and post authority is way too stark to be natural.

Peeling her eyelids down with sadistic glee while a flower wilts, talking about loving hellish temperatures, the mocking way she called herself his treasure, challenging her dad to find an exorcist while laughing demonically. Even a self-centered sadist would feel bad if their father called them a devil, but she reveled in it.

The question is when something went wrong, since she was bizarrely prodigious to the point that the tutor chose to graduate her at the age of seven and acted nice until 10.

Also keep in mind that OG Jelly preferred the taste of raw, bloody meat. There's some bad juju in that soul, man, and I'm not sure if I can fuck it out of her.
