Being entirely fair, this 'character development' was set up and was a bit of a slow burn for a minute- Yuna is kotowing to all these demands/requests because at this point, she actually gives a damn about ALL these characters, considers them friends or at least good people, and simply doesn't want to make them feel bad/leave them in the lurch, since that's not really what friends do. Elenora has pretty much proven to be a good lady, if a bit flighty, so Yuna likely feels it's overkill to threaten her- she knows that push comes to shove, Fina will be more than safe, and that Fina has long been overreacting about being 'proper' and 'respectful' in that house when the actual owners don't really care. It's not a matter of 'undermining dignity', it's a matter of 'literally no one cares about you being buttoned up in that house BUT you, you gotta learn to chill.'Yuna has unfortunately devolved from an Ueberfrau character who didn't take crap to a more typical Japanese pop-lit protagonist. She shouldn't feel the need to yield nor to explain herself to Eleanora, and if Yuna is after all going to leave Fina with Eleanora, Yuna should impress upon Eleanora that, if she undermines Fina's dignity, then Eleanora will literally get her ears boxed.

So yeah, basically, Yuna is more empathetic now because she has people she's close to. Recall she really WAS about to just call the whole thing off until Elenora asked. Elenora is a friend, so she's more amendable to her asking than some random receptionist.
