Goal is pretty clear here: Ed has to earn Doben's respect now so that later on - if they can't stop Doben's sister from being kidnapped - when Waffles tells Doben to fight at full power because his no-fur friends are already rescuing her he'll agree to it.

This. Doben only listens to people who he thinks or knows to be capable or strong; strength is the only language he trusts.

Really just seems like the author painted themselves into a corner by naming one of the arc's primary characters "Waffles."

And all they had to do is draw some crepes -- which find themselves represented all over in Japanese media.
Wow they call waffles "crêpes", really makes you feel like it's another world, such an immersive manga.
They look like waffles to you because thats what AMERICAN waffles look like in reality waffles and crepes can look exactly the same

the difference is in the batter not the shape

Yes, quite, the difference is in the batter. Waffle batter is leavened, and crepe batter is not. I don't find it chemically likely that you would be able to get a crepe to look like that.

But waffles are specifically cooked between patterned plates (waffle iron). Crepes are cooked on a pan or griddle so they don't have the pattern. No matter how you look at it, those are waffles. It's the same thing in Europe.
