Eaten them once... and I can say that it is superbly delicious. Too bad it's not available in my part of the world..

Regarding the ducks:

Kenji Lopez-Alt, a fairly renowned individual in the food world has a well-written article about how Foei Gras, despite it's reputation is not intrinsically "unethical", unless you consider meat unethical. Give it a read.

To summarize: It's possible to raise ducks humanely, ducks raised gently have higher grade livers, tube-feeding a duck is not painful since a duck is just built different (they swallow spiky fish in the wild, a smooth tube is easy in comparison), and their bodies are made for gorging (for migratory reasons).

It's just one article but Kenji Lopez-Alt has a good reputation. Not all Foei Gras is ethically raised, but foei gras does not have to be unethically raised.

Ethnically raised Foei Gras are only harvested in the few weeks before ducks will migrate since the ducks were gorging themselves anyway resulting in a naturally fatty liver btw. From what I've read it's typically just a farm with a giant lake that lots of ducks like to come feed in before migration so the farm tags the ducks to keep track of population and don't over harvest.
