more like a thickly sauced crawfish or shrimp in this case- fairly quick dish to make compared to stew, or even roux block japanese curries. The only lengthy part depends on how dark you want the thickening roux. After that, frying the diced trinity (and/or tomatoes, tho this gets debated), other aromatics like garlic, and spices (can buy a premade cajun or creole mix), stock, shellfish. No stewing or long cooking of the seafood/shellfish. Wonder what was added this chapter, since sweetness and umami additions would definitely veer towards japanese curry and not the typical flavor of the dish.
