Catherine is a real character and has interacted with other chars also. If I recall correctly in the main novel there were mentions of “a mysterious someone that’s Claire’s roommate”. As for why she’s nowhere to be found in the main novels:

We’re caught up for now. No chapter for Yuri-hime 2024/1 (this month). There might be one for 2024/2 (December release) but we don’t know yet. Volume 1 will be released in December, probably explains the one month break.

Koruse probably couldn’t do that since it’s serialized monthly. Or else this chapter would’ve been 60-70 pages long, I don’t think they could even manage it.
