The cheese that doesn't melt is mostly hard and/or aged. Semi-hard/soft cheese melts just fine. As long as it's cow milk cheese - sheep or goat cheese also doesn't melt well.

Hmm, the new translation is pretty good, but sometimes it feels a bit stiff. I think it's just the lack of proper capitalization... a small thing, but seems to make a noticeable difference.
