Generally speaking, these split chapters aren't because the scanlation team chose to do it that way, it's because they were originally released that way.

1) Her "normal" text boxes are what everyone else hears (her actual voice)
2) What she "wants" to say is the inverted color box.

Yeah, that inflection point of the story is like 75% of why I read these kinds of stories.
A couple series draw it out way too far though, so I hope this one finds a nice balance.
I'm going to go out on a limb and guess that most of these WN authors (since we have to blame the source material) either:
A) Haven't had a relationship with the opposite sex and thus, all they know of relationships comes from manga/WN/Anime; or
B) Are marketing it towards people who haven't...

Honestly, all of the non-main characters are the best part of the series.
